Gingerbread Baked Oatmeal

Oatmeal is one of my favorite morning meals. It is the perfect cozy, warm dish for the winter when it is nice & chilly outside. But, sometimes when I have a little more time on my hands,  I like to swap out my normal quick oatmeal for baked oatmeal. Today I will be showing y'all how to make your own personal gingerbread baked oatmeal topped with baked apples. Bon Appétit!


  • For the Baked Oatmeal

    • 1/2 c of oats (I used a packet of apple cinnamon quick oats & 1/4 c of rolled oats)

    • 1/3 c water or milk

    • 1/2 tsp vanilla extract

    • 1/3 c egg whites (approx. 2 large eggs)

    • 1/2 tsp maple syrup

    • 1 tsp baking powder

    • 3/4 tsp cinnamon

    • 1/4 tsp pumpkin pie spice

    • 1/4 tsp ground ginger

  • For the Cooked Apples

    • 1 small red apple (I prefer Honeycrisp)

    • 1 tsp coconut oil

    • 3 tbsp vanilla extract

    • 1 1/2 tbsp cinnamon


  1. Preheat your oven to 350*F

  2. In a medium bowl, add all ingredients for the baked oatmeal. Once everything is well combined, pour the mixture into a small ramekin.

  3. Bake for 30-35 min.

  4. While the oatmeal is baking, begin to heat a medium size skillet on your stovetop. Place coconut oil in skillet & allow to melt.

  5. Slice your apple into cubes & put into skillet. Add cinnamon & vanilla extract. Then, stir your apples & allow to cook until tender.

  6. When finished, pull your baked oatmeal out of the oven & allow to cool for 5 minutes or so. Then, top it with your baked apples, whipped cream, or maple syrup & enjoy!
