French Toast in a Mug

It's Sunday people! As promised, today I am bringing you a condensed version of one of my favorite weekend brunch meals--French Toast in a Mug! 

A couple of weeks ago I tried out this recipe & fell in love! It takes hardly any time to whip up & can easily be taken on the go for those of you with early morning activities. Bon app├ętit.


  • 2 slices of preferred bread ( I used Daves Killer Bread: 21 Whole Grains & Seeds)

  • 1/4 c egg whites or 1 egg

  • 2 tbsp preferred milk (I used 2%)

  • 1 tsp maple syrup

  • 3/4 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Sprinkle of salt

  • Toppings of your choice (I used blueberries, whipped cream, & maple syrup)


  1. Begin by slicing your bread into 1 inch squares.

  2. In a small bowl, mix together your egg whites, milk, maple syrup, vanilla extract, & cinnamon.

  3. In a mug or mason jar, lay enough slices of bread to cover the bottom. Then pour your some of the egg mixture on top of the bread, making sure to fully cover it. Continue to repeat this step until all bread & egg mixture has been used up.

  4. Set your mug or mason jar into the microwave for 1 minute. If still runny, continue to cook in 30 second increments until fully cooked.

  5. Once done, top with your preferred toppings & serve!
