What I Eat in a Summer Day

Hello hello! For this week’s blog post, I am going to be talking about some of my favorite summertime breakfast, lunch, dinner, and snacks! I find these posts to be very interesting and really helpful in that I often am able to gain new meal ideas so I hope you are able to do the same with this post! Also, don’t forget to check out this week’s YouTube video which corresponds with this week’s blog post! With that being said, let’s get into it!

Breakfast

I have talked a lot about breakfast here on the blog because it is simply my favorite meal of the day, therefore I love using my extra summer morning time to try out different ideas. On this particular day, a refreshing smoothie sounded really fabulous so that’s exactly what I made. In my smoothie, I put a handful of baby spinach, frozen mixed berries, a scoop of vanilla whey protein powder and then I used half water and half coconut water for my liquid.

As tasty as that was, something about drinking my breakfast never really holds me over, so I used the last piece of my favorite scratch sprouted wheat bread (from HEB) as toast. I topped my toast with some almond cashew butter and a drizzle of honey.

Now, what’s breakfast without coffee??? Absolutely no good. Lol. So yes, I did also eat/drink my breakfast with a cup of coffee and a splash of almond milk.

Mid-Morning Latte

Most days, I eat breakfast and then don’t eat again until lunch. However, this particular day happened to be my friend, Grace’s, 17th birthday so we went up to Tiny’s for a morning snack where I sipped on a oat milk matcha latte (my favorite).

Lunch

A cool yogurt parfait is truly one of my favorite meals (especially in the hot summer). I typically will eat this for lunch (as I did today), but every now and then it serves as a wonderful breakfast. For my yogurt, I like to use a carton of the Siggis Icelandic yogurt. Today, I simply went with the vanilla bean flavor. I then top it with whatever fresh fruit we have on hand. In this case, it was just a handful of blueberries. Granola is my next topping and the specific type varies based on what we have at the house. Today, I used the chocolate grain-free no-grain-ola (get it?!). Since it doesn’t have any oats or grains in it, it really is more of a trail mix type situation, but delicious nevertheless. And finally I finish off my parfait with a drizzle of honey.

Afternoon Snack

Afternoon snack is family ritual of mine and originates from my great grandparents’ Southern Louisianan families. It is just what it sounds like. Every afternoon around 3-4:00 pm, my family gathers and enjoys coffee and some type of snack together. Typically, I have a bar of sorts just like I did today with a Lära bar (and of course my coffee).

Dinner

Mom has always made dinner during the week nights and I must say, she is very good at it. Of course, our dinner is always different, but it is normally very clean and healthy and consists of sometime of veggie, grain, and protein. Today, she made one of my favorite’s turkey and rice stuffed bell peppers with a side salad. It is soo yummy and makes for great lunch the following day!!

Evening Tea Time

Similarly to afternoon snack, following dinner my family typically gathers again to enjoy a cup of evening tea together. With my tea today, I had a few banookies which are these awesome healthy banana, oat, and chocolate cookies that we make. Click here for the recipe. It’s so simple!!
